Ingredients

Whole Wheat Bread
  • 390g Whole wheat flour
  • 220g Water
  • 10g Salt
  • 35g Sugar
  • 30g Oil or Butter
  • 15g Malt Powder
  • 240g Sourdough Starter
White Bread
  • 390g White flour
  • 170g Water
  • 10g Salt
  • 35g Sugar
  • 30g Oil or Butter
  • 15g Malt Powder
  • 240g Sourdough Starter

Method

  1. First add the water, then the Salt, Sugar, oil to bread machine. Then add Flour, Malt, and finally the Starter.
  2. Set your bread machine to the dough setting to combine the ingredients.
  3. With sourdough more rising time is required. For whole wheat bread, let proof for 3 hours. For white bread let rise for 2 hours.
  4. Optional. For Whole wheat bread I like to substitute 100g whole wheat flour with white flour. This provides additional gluten to give a good crumb.
  5. Optional. If you want to try adding other flours, such as buckwheat or spelt, don’t exceed any more than 20% of the “flour”. That means don’t substitute more than 100g of the flour with non-wheat flour.
