Ingredients
Whole Wheat Bread
- 390g Whole wheat flour
- 220g Water
- 10g Salt
- 35g Sugar
- 30g Oil or Butter
- 15g Malt Powder
- 240g Sourdough Starter
White Bread
- 390g White flour
- 170g Water
- 10g Salt
- 35g Sugar
- 30g Oil or Butter
- 15g Malt Powder
- 240g Sourdough Starter
Method
- First add the water, then the Salt, Sugar, oil to bread machine. Then add Flour, Malt, and finally the Starter.
- Set your bread machine to the dough setting to combine the ingredients.
- With sourdough more rising time is required. For whole wheat bread, let proof for 3 hours. For white bread let rise for 2 hours.
- Optional. For Whole wheat bread I like to substitute 100g whole wheat flour with white flour. This provides additional gluten to give a good crumb.
- Optional. If you want to try adding other flours, such as buckwheat or spelt, don’t exceed any more than 20% of the “flour”. That means don’t substitute more than 100g of the flour with non-wheat flour.
